There’s something about pasta that makes it so comforting.
I don’t know if it’s the carbs, or the texture, or the fact that it takes 15 minutes to make a pasta dish, but pasta in any shape or form turns out to be the perfect comfort food for the times that we really don’t want to stay in the kitchen for a long time.
I like how versatile pasta is: you can make it with chicken like this one pan chicken parmesan pasta (readers’ favorite), or shrimp such as my easy spicy shrimp marinara linguini or vegetarian like this new mushroom pesto penne that has turned into one of my new favorites!
This mushroom pesto penne is one of those dishes that I love making when we want to have a nice comforting dinner that doesn’t include meat. Even somebody like me who lives on chicken, beef and seafood sometimes needs to take a break. This mushroom pesto penne is ready in almost 20 minutes. As the water comes to boil and the pasta is cooking, you can saute the mushrooms. I usually saute them for almost 10 minutes so they are fully cooked but a little firm.
Try to use a good quality pesto. I got mine from Eataly. Have you ever been to one? Some of their products are fantastic. While I’ve never made homemade pesto, if you have a good recipe for homemade pesto definitely use it. Just before serving, top the pasta with some good parmesan cheese and enjoy your meal!
- 1 1/2 cup uncooked penne
- 2 tbsp vegetable oil
- 16 oz baby bella mushroom
- 3 tbsp good quality pesto sauce
- 1/2 cup Parmesan cheese
- Cook penne according to the package. Set aside.
- Heat vegetable oil in a large skillet over medium heat and saute mushrooms until brown and cooked. Add in pesto sauce and pasta. Mix well.
- Serve and top with Parmesan cheese.
