But what’s even stronger than rose water? Saffron. This gem has the power to turn every ordinary recipe, savory or sweet, into ultra-extraordinary. I grew up having saffron in almost every dish and can’t imagine my life any other way. We use saffron in savory dishes like Persian steamed white rice – Chelow or sweet recipes like traditional Persian ice cream – Bastani Sonnati. When you live in a the US and your country is sanctioned, you can’t just walk into the supermarket and get your favorite ice cream whenever you crave it. Instead, you have to rent a car and go to the three ethnic stores in your state looking for the ice cream just to see that it’s not available. Or, like me, simply come up with an easier solution and make this Persian saffron milkshake.

Being an Iranian, I might not have traditional Iranian ice cream in my freezer but I sure do have saffron and rose water in my pantry all the time. So all I needed to do was to bloom some saffron and take out my blender and blend vanilla ice cream, milk, bloomed saffron, rose water and cardamom and voila, traditional Iranian ice cream in a glass. You’ll taste the love of Persian cuisine in every sip. You know how I love my homeland’s cuisine. After all, I loved it so much I wrote a cookbook about it.

If you are worried about the price of saffron, I should tell you one thing: yes, it’s quite a bit more expensive than other spices, but it’s like an investment. It doesn’t go bad and you can use a small amount of it for a very long time.

So if you think you would like to enjoy a bit more luxury in your diet every now and then, saffron is the way to go.

Persian Saffron Milkshake

Ingredients

  • 1 cup vanilla ice cream I used low fat
  • 1 cup milk I used non fat
  • 1 tbsp bloomed saffron
  • A pinch of ground cardamom
  • 1 tbsp rosewater

Instructions

  1. Blend all the ingredients in a blender, serve cold.
