I think potatoes are one of the most versatile ingredients out there. Boiled, grilled, baked: however they are, they taste great! We love potatoes in any shape or form, whether it be homemade cheesy scalloped potatoes, garlic butter mashed potatoes or Yeralma Yumurta – potatoes and eggs. And today I’m introducing another potato combination!
This year we are going to make a basic Irish dish called Colcannon Mash for St. Patrick’s Day and we’re going to serve it with Cooked Perfect® Fire Grilled Chicken to bring flavorful convenience to our get together. The ingredients for Irish Colcannon mashed potatoes recipe are simple and easy to find: cabbage, potatoes, onion, chives, butter and milk.
How to make Colcannon mashed potatoes?
Start with boiling the red potatoes. I prefer using red potatoes as I love their texture and flavor. As the potatoes are being cooked, sauté the onion in a large pan until golden brown and then add the shredded cabbage and cook for about ten to fifteen minutes until it’s soft and flavorful. Once the red potatoes are fully cooked, drain and start mashing them. Add in butter and milk and mash until everything is fully combined.
Add the sautéed onion and cabbage to the mashed potatoes and stir well. Add in salt and pepper to taste and serve warm. It’s such a comforting appetizer! I always make sure to make a large batch as one serving is totally not enough!
What do you serve with Colcannon?

This is a dish that my family likes a lot which actually is quite interesting to me because cabbage is not a common vegetable in Persian cuisine. It’s good to see that we have found another way to serve cabbage at home that goes beyond salad. I love how soft and tasty cabbage is in Colcannon potatoes and the caramelized onion gives a subtle sweetness to this dish which is just perfect.
Notes and tips to make Colcannon mashed potatoes:
- I love to keep the skin on the red potatoes because of their texture and flavor. But you can use other types of potatoes and just peel the skin off.
- If chives are not available, you can use scallions instead.
- Add some minced garlic to the cooked onion with the cabbage for a kick of flavor.
- Store the leftovers in an airtight container and refrigerate for up to three days.

- 1 lb Red Potatoes Washed
- 4 tbsp Unsalted Butter
- 1/2 cup Whole Milk
- 2 tbsp Olive Oil
- 1 large Onion Sliced
- 6 cups Shredded Cabbage
- 1 tsp Salt
- 1/4 tsp Black Pepper
- 1/3 cup Chives Chopped
- 1 package Cooked Perfect Fire Grilled Chunks Buffalo Ranch
In a large post, boil the red potatoes until fully cooked.
Meanwhile, heat olive oil in a large pan, saute sliced onion until golden.
Add in shredded cabbage and cook until it's soft and cooked. Add in salt and pepper.
Drain the potatoes and place them in a large bowl. Leave the skin on.
Mash the potatoes using a fork or a potato masher. Add in butter and milk, mix well.
Mix in the onion and cabbage mixture into the mashed potatoes. Mix in with chopped chives.
Prepare Cooked Perfect Fire Grilled Chunks Buffalo Ranch according to the packaging. Serve with Colcannon Mash.
If chives are not available, use scallions to add more flavor to Colcannon Mash.
