It’s finally sunny here, even thought it’s really cold. But the sun is out, yay! That’s why I thought to myself: “It’s time to post the bowl of sunshine.” And by that I mean this delicious tropical smoothie bowl.
Most of the recipes I have on the blog are recipes that either turned out well at the first try, or needed very few changes to reach perfection. Of course, there are recipes like pomegranate walnut stew or easy crispy mini meringues that needed some work, whether they were a family recipes for years or required several batches of trial and error before getting that crispy perfect little bites of happiness.
But I can assure you that whatever you find on this blog was definitely tried and loved by us and our loved ones.
This tropical smoothie bowl is no exception. I made it the same day that I made the coconut almond granola. Smoothie bowls are one of those “food trends” that are still out there and loved by many. I like these bowls a lot, especially if it has different toppings, like seeds, more fruit or dried fruit, or granola.
When I was going through whatever I had in the fridge and kitchen to see if I can find a combo of flavors to make some smoothie, I happened to find bananas, mangoes and pineapples. As I was already under magic coconut spell, I decided to make a tropical smoothie bowl and I think that was one of the best decision I made on that day.
You can top it with any kind of granola you like, coconut flakes, chia or flax seeds, or just have it plain. Enjoy!
Tropical Smoothie Bowl
- 2 bananas peeled and cut into pieces
- 2 mangoes peeled and cubed
- 1/4 cup crushed pineapple
- 2/3 cup almond milk or any other nut milk
- Granola and shredded coconut to top optional
- Place the bananas, mangoes, crushed pineapple and almond milk in a blender. Blend until everything is well combined.
- Pour into two bowls and top with granola and shredded coconut.
