White sauce

Base and meat sauce


Cook the butter and flour over medium heat.

Add in the milk and cook until it thickens.

Add in the eggs and parmesan cheese. Mix well to combine and set aside.

Slice the eggplants and roast them in the oven.

Make the meat sauce using onion, garlic, ground beef, spices, tomatoes and tomato paste.

Spread some of the white sauce in the pan and layer the potatoes.

Top with the roasted eggplant slices.

Top with the meat sauce and the remaining white sauce.

Bake in the oven until golden and bubbly.

Let it cool for 15 minutes and then slice.
