Mix the ground beef with onion, yogurt and spices. Use your hands or a food processor.
Transfer to a board and form into a tight log.
Wrap the log tightly in a plastic wrap. Place in the fridge on 1 hour and then in the freezer for 8 hours.
When ready to cook, take the log out of the freezer and let it sit for 5 minutes. Then thinly slice it using a sharp knife.
Heat the pan over medium heat and cook the doner kebab pieces for 1 to 2 minutes on each side.
Make the wraps with sumac onion, tomatoes and pickles.
