Saute the vegetables

Saute onion and garlic with olive oil. Add carrots, peppers, potatoes and lentils.

Add the spices

Add the spices, tomato paste and vegetable stock. Cook for 30 minutes.

Add the spinach

Add the spinach and cook for a few minutes.

Serve with lemon and some crusty toasted bread.

This recipe was easy to make and extremely delicious. I had two bowls back to back!
