Make the spice mix in a small bowl, season the chicken with half of the mix.

Sauté onion, garlic and peppers in the instant pot.

Add in the mushrooms and cook for another minute.

Add rice, the remaining seasoning, carrots and peas. Stir to combine.

Place the seasoned chicken on the rice and add water. Seal the lid and cook for 8 minutes.

Once cooked, shred the chicken and fluff the rice using forks.
