Step 2: Make the spicy butter sauce and assemble: Melt butter in a small saucepan, add pul biber, and stir until dark orange. Place poached eggs on the yogurt sauce and top with the melted butter.
Cilbir is a complete dish on it’s own. However, I always enjoy it with a piece of bread such as simit, pide, lavash bread or pita. You can serve it as a part of a large and complete Turkish breakfast with gozleme, borek, menemen and some freshly brewed tea.
