Easy Side Dish
Slice the eggplant and the tomatoes.
Salt the eggplant slices and let them sit for some minutes to sweat.
Pat dry the eggplant slices and shallow fry them in a pan.
Fry the tomatoes and garlic separately in a pan.
Plate the fried eggplant, top with fried tomatoes and garlic.
Serve this dish with some yogurt on the side. It would go great with chicken or beef.
