RECIPE FOR BEGINNERS
Boil the potatoes until fork tender but not mushy. This will take about 10 minutes once they start boiling. Make sure the potatoes are fully cooked but they're not falling apart.
Drain the potatoes and run under cold water to stop the cooking process. Place the potatoes in a large bowl and leave them to cool. Add in the chopped onion.
Add the dill and parsley to the potatoes. You can add other herbs such as cilantro or green onions as well.
To make the dressing, mix zaatar, olive oil, minced garlic and lemon juice in a bowl and add it to the potato salad. Mix well.
Taste and add more salt if needed. You can refrigerate this salad for a couple of hours before serving.
