Easy Minestrone Soup Recipe

Saute the onion and garlic until translucent. 

Add the celery, leek, zucchini, carrots and yellow squash. 

Stir in the tomato paste, crushed tomatoes, Italian seasoning, salt and pepper.

Add in the canned white beans. 

Add in the pasta and vegetable broth. Cook until the pasta is tender.  

Stir in the spinach and cook for 5 minutes. 

Serve warm and enjoy!
