Heat the olive oil and add the onions.
Add the thinly sliced potatoes to the onions and cook.
Cook until the potatoes are fork tender.
Mix 6 eggs in a large bowl.
Add in the cooked onions and potatoes to the eggs. season with salt and pepper.
Pour the mixture into a hot pan and cook for a few minutes. Flip and cook on the other side as well.
Serve for breakfast, brunch. lunch or dinner.
