Mix sugar, yeast, flour, salt, water and oil in a bowl of a stand mixer.
Knead until the dough comes together and is not sticky.
Place in a bowl and let it rise until doubled in size.
Gently punch the dough down.
Divide the dough into 16 pieces.
Roll two pieces of the dough out and shape like tubes.
Roll the dough tubes in opposite directions.
And shape it into a ring. Repeat the process with the remaining dough balls.
Dip the rings in a molasses and water combo (you can also use honey).
And then dip into sesame seeds.
Let rise for another 20 minutes and then bake in the oven for 12 to 15 minutes.
Serve simit with cheese, tomatoes, walnuts and cucumbers.
