Vegan Lentil Meatballs
This is the perfect dish for summer. You can serve it cold or at room temperature.

What you need
- Lentils - Bulgur - Onion and garlic - Tomato paste - Spices - Herbs - Olive oil
Cook until the water is absorbed.
Place the lentils in a sauce pan and cover with water.
Saute onion and garlic in olive oil.
Add the fine bulgur to the lentils, cover and let it sit for 30 minutes.
Add the onion and garlic to lentils and bulgur.
Add in the tomato paste and cook for a few minutes.
Start shaping them and refrigerate for one hour.
Add in the herbs, spices and olive oil.
Serve these vegan lentil balls as a main dish with salad or an appetizer with some lettuce.
Store the leftovers in an airtight container and refrigerate for up to 5 days.
