Eggplant Caponata

Ingredients

- Eggplant - Olive oil - Onion and garlic - Tomatoes  - Bell pepper - Olives Capers, salt and pepper

Roast the eggplant

Roast the eggplant in the oven for 20 minutes.

Saute the vegetables

Saute onion and garlic. Add in the tomatoes and bell pepper.

Add the eggplant

Add in the roasted eggplant.

Final touches

Add in the olives and capers. Cook for a few minutes.

Serve with crusty bread.
