- Eggplant - Eggs - Breadcrumbs - Olive oil - Marinara sauce - Parmesan cheese - Mozzarella
Salt the eggplant slices and let them sit for 45 minutes so they start "sweating".
Pat dry the eggplants on both sides. Dredge the eggplant in egg and breadcrumbs.
Fry the eggplant slices for 4 minutes on each side. Place the cooked eggplant in a baking dish on marinara sauce.
Top with mozzarella and parmesan. Repeat the layers until all is finished.
Bake in the oven for 40 minutes. Let cool for 15 minutes and serve.
