What is Gozleme?

Gozleme is traditional Turkish flatbread stuffed with various fillings like spinach and potatoes. The dough, leavening agent-free, is thinly rolled with an oklava, filled, folded, sealed, and cooked in a pan.

A popular Turkish street food, gozleme is traditionally cooked on a large flat pan called a sac, similar to kumpir. If sac isn't on hand, it can be made in a nonstick pan without oil, then brushed with butter or olive oil after cooking.
