Greek Chicken & Rice
Lemon juice and olive oil
Onion and garlic
Paprika and cumin
Marinade the chicken and sear on both sides and set aside. In the same pan, saute the onion and garlic.
Add the rice and spices. Stir to combine.
Add the water and bring to simmer. Add the chicken back to the pan. Cover and bake in the oven for 35 minutes.
Uncover and cook for 10 minutes. Top with olives and lemon slices.
