Greek  Lemon Chicken  Orzo Soup


- Chicken breast - Onion and garlic - Carrots and potatoes - Spices - Orzo - Dill and spinach

Cook the chicken

Sear the chicken in a pan for a couple of minutes and then bake in the oven for 25 minutes.


Sauté the onion

In a large pot, sauté onion and garlic until golden.


Add the veggies

Add the carrots, potatoes and spices to the onion and cook for a few minutes.


Add the stock

Add in the chicken stock and orzo. Bring to a simmer and cook until the orzo is fully cooked.


Add the spinach

Add the shredded chicken, spinach, dill and lemon juice to the soup and cook for a few minutes.


Serve with fresh lemon juice and crusty bread.
