Lentil Soup

Ingredients

Onion

In a pot saute onion with olive oil until golden.

Tomato paste

Add the tomato paste and cook for a few minutes.

Carrots

Add the carrots and cook for a few more minutes.

Red lentils

Add in the red lentils and stir to combine.

Water

Add the water and bring it to a simmer.

Cook

Cook for about 30 minutes. Blend using a blender or immersion blender.

Serve

Serve warm with some lemon juice and pepper.
