Mix the olive oil, spices and garlic in a bowl. Add the chicken thighs and make sure they're fully coated with the marinade. Cover and refrigerate for at least 30 minutes.
Place the chicken thighs on a baking sheet and bake in the oven for 30 minutes.
Once the chicken is cooked, take it out of the oven and slice it into strips.
Return the the chicken to the baking sheet and roast in the oven until crispy.
Serve with pita, salad and a yogurt sauce.
