Salt the eggplant slices on both sides and let the sweat. Then roast them in the oven.

Sauté onion in some olive oil until light and golden.

Add the ground beef and spices to the onion. Brown the ground beef completely.

Add the tomato sauce and crushed tomatoes.

Cook for a few minutes for the flavors to combine. Turn the heat off and set it aside.

Place the ricotta in a bowl and add the egg and parmesan cheese.

Mix to combine using a fork or a whisk.. Set it aside.

Spread a layer of the meat sauce in a baking dish and top it with roasted eggplant.

Top with the ricotta mixture and add more meat sauce. Repeat the layers until all is used.
