Mediterranean Green Lentil Soup

So Easy!

Saute onion and garlic until translucent. Add in chopped pepper and carrots.

Add in the potatoes, green lentils and tomato paste.

Add in turmeric, paprika, cumin, salt and vegetable broth.

Cover and cook for 30 minutes. Then add the spinach and stir to combine.

Serve with fresh parsley and lemon juice.


You can add other vegetables such as leek or mushrooms to this recipe. Also, you can use chicken broth instead of vegetable broth. To make it spicy, add some cayenne pepper.
