Instant Pot Chicken & Rice

Super east and quick to make

Ingredients

Spice Mix

Make the spice mix in a small bowl and reserve half.

Season

Season the chicken breasts with half of the spice mix.

Onion & GArlic

Saute onion & garlic  in some olive oil in the instant pot.

Red bell pepper

Add the diced pepper to the onion and garlic. Sauté for a few minutes.

Mushroom

Add in the mushroom and cook for a minute.

Rice

Add in the rice and the remaining of the spice mix.

Peas & Carrots

Add frozen peas and diced carrots.

Chicken

Pour some water into the instant pot, arrange the chicken and secure the lid. Set to cook for 8 minutes.

Once the chicken and rice is cooked, do a 10 minute natural release and then quick release.

Shred the chicken and return it to the instant pot.

Serve with some fresh salad or yogurt and cucumber.
