Chicken & Rice
Pat dry the chicken breasts and top with the spice mix.
Turn the instant pot to saute and cook the onion until golden.
Add in the garlic and cook for a few minutes.
Add the chopped red bell pepper and cook for a minute.
Add in the sliced mushrooms.
Add in the rice and the spice mix.
Add the frozen peas, carrots and water.
Place the chicken breasts on the rice. Cover and cook.
Once cooked, take the chicken out and shred it.
Return the shredded chicken to the pot and mix.
Serve with a fresh side salad.
