Persian  Potato Patties

Ingredients

Boil the potatoes until tender and then mash them.

Add the eggs and mix well.

Add the flour and saffron (saffron is optional).

Add salt, pepper, turmeric and dried mint.

Heat oil in a pan over medium heat. Fry the patties for 3-5 minutes.

Flip and fry for another 3 minutes until golden.
