Shakshuka

Ingredients

onion

Saute onion in olive oil until translucent.

Peppers

Add in the red pepper and cook until it has softened.

Tomatoes

Add in the tomatoes and the tomato paste. Stir and cook for a few minutes.

Eggs

Add the eggs to the tomatoes. and cover with a lid. Cook for a few minutes until the eggs are set.

Serve

Top with crumbled feta and chopped parsley.
