How To Make Bulgur Pilaf

2 cups bulgur coarse 2 tbsp olive oil 1 large onion diced 3 cloves garlic minced 1 green pepper diced 3 roma tomatoes chopped 1 ½ tablespoon tomato paste ½ teaspoon salt ½ teaspoon black pepper 3 ½ cup water

Saute onion and garlic until translucent. 

Step 1

Add the green pepper and tomatoes. Mix and cook for a few minutes. 

Step 2

Add the tomato paste and spices. Stir in the rinsed bulgur as well. 

Step 3

Add the water and bring it to a simmer. Cover and cook for 25 minutes. 

Step 4

Wrap the lid in a towel and cook for another 10 minutes. Then Turn the heat off and let it sit for 5 minutes. 

Step 5

Fluff the bulgur and serve on its own or with chicken, beef or lamb.
