Instant Pot Chicken & Rice


- Chicken breast - Spices - Onion and garlic - Mushrooms, green peas and carrots - Bell pepper - Rice

Mix all the spices in a bowl. Season the chicken on both sides with half of the spice mix and reserve the remaining.

Turn the instant pot to "saute" and cook the chopped onion and garlic.

Add the bell pepper and saute for a few more minutes.

Add the sliced mushrooms and cook for some more minutes.

Add the rice, spices, carrots and peas. Add the water and scrape the bottom.

Place the seasoned chicken breast on the rice and cook for 8 minutes.

Once cooked, take the lid off and take the chicken out of the pot.

Shred the chicken and serve with the rice.

You can serve this dish with some fresh salad.
