Instant Pot Chicken & Rice
Onion and garlic
Bell pepper and peas
Season the chicken
Mix the spices and season the chicken breasts on both sides with half of the spice mix.
Saute the veggies
In the instant pot sauté onion, garlic with olive oil, then add mushrooms and peppers.
Add the rice
Add the rice and the remaining of the spices. Stir and add the peas, carrots and water.
Add the chicken
Place the chicken on the rice. Don't stir. Cook on high for 8 minutes.
Shred the chicken
Take the chicken out of the pot and shred. Serve immediately.
This is a delicious and easy recipe for weeknight dinner.
What a time saver to make this in the pressure cooker. My whole family loved it!
