Peel the garlic cloves and remove the green sprout from the center.
Place the garlic cloves and water in a food processor.
Blend to mince the garlic. Scrape the sides using a spatula.
Add half of the lemon juice and salt to the garlic and blend again.
As the food processor is running, drizzle half of the oil. Then drizzle the rest of the lemon juice and finish with drizzling the oil very slowly.
Toum is ready when it's white, increased in volume and fluffy.
Use it on sandwiches, grilled meat or as a marinade.
