Mediterranean Lentil Soup

Saute onion and garlic followed by the carrots, bell pepper, potatoes and lentils.  Add the tomato paste and the spices. 

Add the vegetable stock and salt. Cook until the lentils are tender. Add the spinach and cook for a few minutes. 

Serve in bowls and top with chopped parsley. Add some lemon juice right before serving. 

Enjoy with some crusty bread!
