Greek Eggplant Dip

Char the eggplant
Char the eggplant on all sides until the flesh is soft.
Cut the eggplant open
Cut the eggplant open and scoop out the flesh into a strainer.
Let the eggplant strain for about 30 minutes.
Add the ingredients
Place the eggplant in a bowl and add the onion, parsley, garlic, olive oil, lemon juice, salt and pepper. Mix well.
Top with more olive oil and serve with pita chips.
