Mushroom  Barley Soup

Easy & Tasty!

Saute onion, garlic, celery and carrots for 10 minutes until the onion is translucent. 

Stir in the turmeric, salt, pepper and tomato paste.

Add in the sliced mushrooms.

Once the mushrooms are a bit soft, add the barley. 

Add in the water or vegetable stock. Cook for 45 minutes. 

Finish with freshly squeezed lemon juice and chopped parsley.
