Mix the shrimp with the spices and stir to combine.
Saute onion and garlic until golden.
Add the chopped leek and sliced peppers to the onion.
Add paprika, oregano, cumin and salt to the sautéed vegetables.
Add in the chopped tomatoes.
Add the capers and seasoned shrimp.
Cook until the shrimp is pink and opaque.
Top with parsley and serve with your favorite side.
