1. Mix dough: Combine flour, instant yeast, salt, and water in a large bowl. Stir until well incorporated. The dough may be slightly sticky, which is normal.
2. Cover bowl with plastic wrap and a towel. Let it sit in a draft-free spot like a turned-off oven for 6-8 hours.
3. After resting, transfer the risen dough to a floured surface. Gently shape it into a ball, ensuring the bottom is intact. Place on parchment paper, sprinkle with flour, cover with a towel, and let it sit at room temperature for 1 hour.
4. Preheat oven to 450°F with a 6 to 8-quart Dutch oven and lid inside. After dough rests for an hour and oven is hot, carefully remove the pot and lid. Using oven mitts, place parchment paper with dough into the Dutch oven. Cover and bake for 30 minutes.
After 30 minutes, remove the lid to expose the bread. It should have risen and look quite pale. Bake uncovered for another 25 minutes until the loaf appears to be golden brown
