Mix desiccated coconut with egg whites, sugar and oil.
Cook the mixture for 10 minutes and then let it come to room temperature.
Pipe the batter onto a baking sheet and leave 2 inch space between each cookie.
Top the cookies with ground pistachios (optional) and bake for 20 minutes.
Let the cookies cool for 15 minutes and then transfer them to a platter.
