Best Ever Ratatouille
-Onion and garlic - Eggplant and zucchini - Red and green bell peppers - Tomatoes - Salt, pepper, oregano and thyme - Olive oil
Sauté onion and garlic in olive oil until translucent.
Add in the eggplant and cook for a few minutes.
Add the zucchini and bell peppers. Cook for a few more minutes.
Add the tomatoes and spices. Cover and cook for 30 minutes.
Top with some freshly chopped parsley and serve warm.
Such a great dish! ratatouille is so good and flavorful! This was easy to make!
