Easy Ratatouille


- Onion and garlic - Eggplant - Zucchini - Green and red bell peppers - Tomatoes - Salt, pepper, oregano and thyme

Step 1

Sauté onion and garlic until translucent. 

Step 2

Add in cubed eggplants and cook for a few minutes.

Step 3

Add cubed zucchini and cook for 5 minutes. 

Step 4

Add chopped bell peppers. Stir well and cook for few minutes.

Step 5

Add in tomatoes, thyme, oregano, salt and pepper. 

Step 6

Cover and cook for about 30 minutes until all vegetables are soft and cooked. 

This is definitely my kind of comfort food. So much colour! I love serving it with spaghetti.
