Salmon Croquettes


- Cooked salmon - Cooked potatoes - Eggs - Green onions - Spices and mustard - breadcrumbs - Olive oil

In a large bowl mix the potatoes with salmon. Add in the eggs, green onion, spices, mustard and breadcrumbs.

Cover and refrigerate for one hour. Then take 2 tbsp of the mixture and shape into a cylinder.

Heat some olive oil in a pan and sear the croquettes for about 3 minutes  on each side.

This recipe is perfect for using up leftover salmon. It's easy and quick, so good for dinner!
