Mushrooms and spinach
The egg mixture
In a large bowl mix the eggs with milk.
Make the filling
In a large pan cook sausage with bell peppers, mushrooms, spinach and spices.
Fill the muffin cups
Fill the muffin cups with the sausage veggie mixture and add the egg and milk mixture.
Bake in the oven
Top with cheese and bake in the oven until fully cooked.
These would make the perfect breakfast.
My entire family enjoys these delicious grab-and-go breakfast muffins! We love the Mediterranean flavors!
