Cook Time: 30 Min
Saute onion in olive oil over medium heat until translucent.
Add the garlic and bell pepper. Cook until they veggies are soft.
Add the tomatoes and the spices. Cook until the sauce thickens.
Make wells using a wooden spoon and break the eggs into the tomato sauce.
Cover and cook for 8 to 12 minutes.
Top with feta and parsley. Serve immediately.
