Potato Omelet

Ingredients

Onion

Heat the olive oil in a pan and add the chopped onion.

Potatoes

Add in the thinly sliced potatoes as well.

Cook

Cook until the potatoes are fork tender and the onions are golden.

Eggs

Whisk the eggs in a large bowl.

Mix

Add in the potatoes and onions. Season with salt and pepper.

Cook

Transfer the batter to a pan and cook over medium heat until the bottom is set.

Cook

Flip and cook on the other side for a few minutes as well.
