White cheese (such as feta)
For the potato filling: Mix cooked potatoes with salt, pepper and spices.
For the cheese filling: Mix feta cheese, herbs and spices in a bowl.
Add some of the filling one inch away from the wide edge of the dough.
Fold the outer corners over the filling and roll the borek. Wet the edges again and roll tightly.
Fry on all sides until crispy and golden. Don't over crowd the pan.
You can serve borek for breakfast or dinner.
