Turkish Red Lentil Soup
Salt and pepper
Saute the onion
Saute onion in some olive oil until golden.
Add the tomato paste
Add the tomato paste and carrots. Cook for a few minutes.
Add the lentils
Add the lentils and spices. Add the water and cook for 20 to 30 minutes.
Blend if needed
When the lentils are cooked, blend the soup in a blender until creamy.
Top with parsley and red pepper.
This soup was outside of my normal food comfort zone but I am so glad I tried it! So creamy and delicious and I loved the spices!
