Grate the zucchini
Grate the zucchini in a large bowl and squeeze it to discard the excess liquid.
Add the herbs
Add chopped green onions, dill and parsley to the zucchini.
Add the eggs to the zucchini and herb mixture. Stir to combine.
Add the flour and spices to the batter and mix to combine.
Sear and cook
Sear the zucchini fritters in olive oil for about 5 minutes on each side.
