Onion and garlic
Eggplant and zucchini
Red and yellow bell peppers
Slice and chop all the vegetables and set them aside.
Sauté onion and peppers.
Add the zucchini and eggplants. Cook until soft.
Add the marinara sauce and cook for 10 minutes.
Add some vegetable sauce to the pan and top with lasagna noodles and cheese.
Top with more vegetable sauce and repeat the layers.
Finish with shredded mozzarella and fresh basil. Bake in the oven for 45 minutes.
Let it cool for a few minutes and then slice.
I think I might love vegetable lasagna even more than a traditional lasagna. So good! This recipe is super simple, but doesn't lack in flavor.
