- 2 cups Krusteaz Pancake Mix
- 1 ⅓ cup cold water
- 8 tablespoon peanut butter
- 8 teaspoon raspberry jelly
Spread the peanut butter into 8 small circles on a parchment paper and chill it in the freezer for 20-30 minutes until firm.
Mix Krusteaz Pancake Mix with cold water using a wire whisk, there will be lumps, don not over mix. Let it sit for 2 minutes.
Heat a non-stick pan over medium heat and pour 2 tablespoons of the batter in the pan, pour 1 teaspoon of jelly and place a peanut butter circle on the jelly and top with more pancake batter to cover the peanut butter. Cook for about 1 minute on one side (until golden brown) then flip and cook the other side.
Server with maple syrup if desired.
