- 1 box Barilla Penne
- 2 tablespoon Olive Oil
- 1 lb Chicken Breast Cubed
- 1 Yellow Onion Diced
- 1 lb Mushrooms Sliced
- ¼ cup Adobo Sauce
- 2 Chipotle Pepper in Adobo Sauce Chopped
- ¼ cup Heavy Cream
Cook Barilla Penne according to the packaging (Al Dante) and set aside.
Heat a large pan over medium heat. Once heated, pour the olive oil into the pan.
Saute chicken until golden brown and cooked. Transfer to a plate.
In the same pan, saute onion until translucent.
Add in mushroom and saute more until soft.
Add in cooked chicken and stir. Pour in Adobo sauce and chopped Chipotle.
Slowly pour the cream and stir until thickens a bit.
Right before serving, add in the pasta and give it a slow stir.
Serve immediately.
